Greek Pizza

This is one of my family's favorite meals, especially on hot summer days when it's too humid to want to cook anything. It's fast, easy, and healthy. We almost always have all of these ingredients on hand, so we get to eat this a lot.

Ingredients:
Whole grain flat bread or pita bread (enough for everyone to get one)
Tzatziki sauce *
Hummus (I'm lazy and just buy the prepared stuff, but I hear it's easy to DIY)
Chopped tomatoes
Sliced Greek olives (although I think I only had black olives on hand for this pictures)
Diced cucumbers
Chopped green onion
Feta cheese, crumbled

(Optional) soak cooked shredded chicken in prepared Greek salad dressing for a few minutes, then add the moist chicken to pizza. Adds flavor and variety.

Directions:
Spread hummus and tzatziki sauce on the pita, then add each of the toppings as desired. Use a fork or your hands to eat. Enjoy!

*You can buy prepared tzatziki, but it's easy to mix up your own. I usually take a 16 oz tub of Greek yogurt, half a lemon, juiced, 1 tsp chopped dill (or 1 tbsp freshly chopped), sprinkle of garlic powder, and salt and pepper to taste.You can add diced cucumbers, like traditional tzaziki sauce, but we put cucumbers on the pizza, so it's a bit redundant...

*An even easier way to make a quick, lazy-man's tzatziki sauce is to add Greek salad dressing to the yogurt. This adds a little dill and lemon and garlic all at once. It's not traditional, but it works.

  1. Yummm...I think we'll try this this weekend. We are in for hot and humid all week long. And yet they still haven't opened the pool. I think my kids may go on strike with signs in front of it if they don't open it soon!
